Get To Know Monique Nelson, Choose To Cook
As a child, I was the pickiest eater you could ever meet. There were many days I would have slept at the dinner table rather than eat the veggies my mom put in front of me. Lucky for me, my stubbornness was met with a kind-hearted mom who always eventually gave in and let me leave the table. I can only imagine how frustrating it must have been to raise me!
As a newly independent young adult, I quickly became a fast food/junk food addict. I ate enough to feed 4 families, but it was all pizza, burgers, chicken fingers and chips. To make a long story a little bit shorter, by the time I was 20 years old I was so severely nutrition deficient I ended up in the hospital.
My short visit in the ER wasn’t overly helpful – they assumed I was anorexic and sent me away without so much as a single recommendation. That’s when I first discovered “nutrition” all about eating for health and using food as fuel for a healthy body!
It was now crystal clear to me how to heal my symptoms – actually cure my illness – simply by eating the right food. I finally came to terms with the fact that I would have to give up my childish disdain for vegetables and my lazy fast food habits and learn how to love the vegetables and foods that would help me thrive, instead of slowly waste away.
I also learned that being thin did not mean being healthy, you need to stop worrying about the quantity of food you eat and start to focus on the quality of that food…or fuel for your body instead.
As a result, I began cooking my own food – so that I would know exactly what was in it – and sneaking in the vegetables that I so hated into everything I created. My plan was to start learning how to cook food that tasted good, didn’t take forever, and was super easy to make…I had little kitchenware or experience!.
I started by learning how to cook the foods I remember loving as a kid, and incorporating the few veggies I did like into everything I ate.
During the process, I realized nutrition was really interesting and exciting, and I set out to learn everything I could about nutrition – what every vitamin, mineral and antioxidant could do for my body, and where I could find it.
Eventually this lead to me quitting my 10+ year career and following my passion to become the IIN Certified Integrative Nutrition Health Coach I am. But first…it started right her with Choose To Cook.
I share what I learn here, and I always will.
The world needs to remember what it’s like to feel amazing, and eating real food is a great place to start.
