Hi, I’m Nicole Hunt!
My vegetarian journey started in 5th grade when I met my best friend. When she was six, she choked on a chicken bone and swore off meat for good. Growing up, I spent a lot of time at her house. So, without trying, I managed to eat a vegetarian diet about 50% of the time. But I still loved my medium rare steaks, burgers, and hot dogs.
Then in college, I read “Skinny Bitch.” Talk about a wake up call. I learned the awful health problems associated with meat consumption. I also learned all about how animals are treated (and killed) in slaughterhouses. I gave up meat cold turkey and have never looked back.
My vegan journey is a bit rockier. I am ALWAYS trying to give up dairy. I gave up milk years ago (I never liked it anyway). Cheese is a different story. I just can’t seem to quit it. But I view my diet like I view everything else I do. I am not perfect. Nobody is. My goal is to do the least amount of damage possible to my body, animals, and the planet. I know I fail often, but I try hard and appreciate that that’s all I can do (for now).
Aside from my dining habits, I am a copywriter for entrepreneurs and small businesses. I help business owners write the right copy, send the right message, and attract the right clients. I write blogs, landing pages, websites, and anything else with a bottom line and a price tag.
I am married to a wonderful man, and we have two fur babies (a rescued boxer/shepherd and a very spoiled black cat). We live in GORGEOUS Portland, OR and spend a lot of time in parks, farmers markets, and quirky theaters that serve beer and pizza.
In my spare time, I love to read or explore my awesome city (Portland). I enjoy kayaking, hiking, singing, writing for fun, and going on late night walks with my husband. I feel most like myself when I am traveling. It doesn’t matter where I travel, whether it’s to a foreign country or just to the beach for a weekend. I believe life is meant to be lived in motion. I also enjoy live theater and take in as many performances as I can. I get to combine these when I travel to visit my sister in NYC.
